Perennial to 60cm with white artichokes that can be eaten fresh or cooked. Plant in a sunny position during Spring, producing white edible tubers during autumn/winter. Harvest late Autumn-Winter. They have a mild nutty flavour, used in stir frys, soups, salads & dips. Available Jun-Nov.
Growing Conditions & Care:
Plant dormant rhizomes about 5cm deep and 50cm apart, ensure you don't waterlog them during the dormant period when they are prone to rotting. Shoots will begin to appear once the weather warms up in your climate. Once plants are established they are quite self-sufficient. Growing as a rambling ground cover they are ideal amongst other plants as an understory. Harvest rhizomes once plants die back in autumn or winter.
Uses:
Edible - eat raw or best cooked as chips, add to stir frys, similar crunchy texture to waterchest nuts.
