Cassava is a hardy perennial shrub to 2 metres. Suited to warm areas, grown for the tapioca tubers produced after 8 months. Boil before eating like potato, young leaves eaten cooked.
Tapioca starch comes from roots of cassava. It is widely used in cooking as a thickener or eaten as a vegetable.
