Plantain is a perennial native of Europe. Use young leaves in salads, useful for bites and sting, also medicinal. Likes average soil in sun to part shade. Entire plant can be eaten, roots cooked and added to soups, leaves can be eaten fresh or cooked - most people steam leaves before adding to salads or stews, you can remove the strings through the leaves, but this is not essential. Seeds, similar to psyllium, can be eaten fresh, dried, used as a thickener or ground into a flour. Dried leaves make a herbal tea.
Plantain thrives in compacted soil, often resulting in it growing in high foot or vehicle traffic areas. It also does well in soggy soil.
